Back in the kitchen Patricia thanks Kerry for f*cking up her dish.
Lorena, Patricia, Art, Takashi
Curtis asks Saipin how she enjoyed it and if she would dine there again (if it were a real restaurant)? She doesn’t think so.

Art notes that “this was a disaster.” Kerry is mortified that he was the reason that Patricia’s dish was ruined. All of the Chefs agree that the evening was “out of their comfort zone.”

The Critics want to see everyone. At Critics’ Table Patricia says “It was stressful, but went ok.” They all had their little meltdowns. James says “A lot of the diners thought the food was good, but overall not the typical tastes of Thailand.”
Firing Squad
Their overall favorites: Kerry- his dish had a thoughtfulness, the puree was great. The diners thought it was a Thai Twish on meat and potatoes. Also Chris! Chris’s dish was adventurous, but a little restrained. Chris noted that he really wanted to flavor of the meat to come through.

On the other side of the coin:

Lorena, Patricia and Art.
Lorena- her broth was good, but she should have poached the chicken in the broth. And the garnish was like eating trees.
Patricia- the duck was just too rare. The dish was adventurous, and they had very high expectations for her.
Art- he clearly tried to keep it simple, but it wound up being bland and boring. They appreciate him putting his “Southern Jazz Hands” on the dish (I kid you not- James Said that) but the chopped cashews used for crust just were not chopped enough.
Patricia tried to rise above it and say that it was her choice to serve the duck, but there were extenuating circumstances, but she does NOT want to throw anyone under the bus. Curtis urged her to speak up if something happened during service that impacted the quality of her dish. Patricia looks to Kerry as if to ask his permission to tell and he ok’d it. So Patricia told what happened and Kerry confirmed it. They chefs are dismissed and go back to the Whine Room.
The critics discuss the issues. Lorena’s garnish was an amateur move and her dish would have been much better if the chicken were poached differently. Patricia was an inch off cooking the best dish.
Feeling, suitably, dirtbagish
If you like it, spread it!:

I don’t understand how Kerry f.. ed up Pta’s duck, if she actually had EXTRA time to cook it. I thought that the problem was that she served it raw?
@aliens.rock Patrica’s duck was already done when Kerry said he needed 5 more minutes. So she had to recook new pieces because her dish ended sitting to long, and ran out of time.
I loved how flustered Dita had Curtis and the other guys. I wished I could ooze sexuality without even trying like that.
I’m not sad to see Art leave I liked him, but I like Patricia so much more. Has a woman won Top Chef Masters yet? I can’t remember any women winning or getting to the finals, I remember a few getting close.
I actually felt bad for Patricia, I really think she wasn’t TRYING to throw anyone under the bus. She basically served raw duck, knowing she was sacrificing her dish for Kerry’s. IMHO, that is something only a true professional chef, who is confident in her abilities, would do. I feel like she felt pretty bad that Kerry was expediting (and hadn’t had the best time of it) – so kinda felt like she should do whatever she could to make it easier for him on his dish.
Wish she had put up good duck – but glad she didn’t go home for it! I LOVE Patricia and Chris!
I think Patricia may have been better off serving her overdone duck, presumably the skin was crisp and rendered on that one. I was surprised that Art went home, though not entirely displeased. I would have been ok with Lorena going too. Something about her just really grates on me.
Whenever Oseland is on the screen, I just want to scream, “Thumbsucker! Thumbsucker!” Am I the only one??? His teeth give him away. There is just something super-creepy about him. The Mr. Rogers vest only adds to the feeling that maybe he’s Chester the Molester of his neighborhood. Those poor guys at the pool party in the last episode probably couldn’t wait to get home and shower.
So happy Patricia got to stay. I think that it’s great that she called out Lorena for hogging up all the burners and leaving a mess everywhere. As MisRed noted, a HUGE part of cooking is keeping things clean, and a true chef would keep cleaning things as he/she goes and not leave it around (which also begs why the heck Kerry was using that blender last week with the top off. WTF???)
The great thing about this show is that it puts the folks in unusual circumstances to see how they roll/cope, and different ones fall by the wayside. At least at this level, most are professional enough to own up to their mistakes as Kerry did with Patricia and her duck (and unlike Lorena who acted all peeved when called out for making a mess.)
Lmao@ the raw duck quacking pic!!
So long, Art! Hollywood was starving without ya!
I was laughing at Stone Cold Fox during the quickfire because he truly was flustered and embarrassed. I kept thinking damn, I wonder what’s going through his mind for him to be so uncomfortable.
I’m glad Patricia didn’t go home, too, and thought her dish would have been quite tasty if cooked properly. That’s one good thing about TCM, at least they (mostly) remain professional and own up to their mistakes. Well, except Lorena. And that douche Ludo from another season who, as I recall, blamed everyone but himself.
Oh, and excellent recap as always, MisRed. I enjoy getting an insiders perspective on things.
MisRed thanks for the LMAO moments, of which I had several reading your recap. Every time I look at Patricia, I am reminded of the Austin Powers scene thanks to you. I swear, I can’t even look at her talking head shots anymore.
I remember that ludo guy, the greasy, arrogant french one! He opens up restaurants for one night or something. He was just on an extremely stupid test on Hell’s Kitchen. I thought maybe he owed Gordon money or something.
